Objectives

Goal of the project “E-Nose” is the development of an artificial nose that helps re-defining quality in coffee production – from bean selection to packaging. Aimed at enhancing aroma analysis and ensuring consistency, this project seeks to elevate the standards of taste and quality for the coffee industry.

An Artificial Nose (E-nose) is an electronic device designed to mimic the olfactory sensing capabilities of the human nose. The project is dedicated to the integration of Artificial Nose technology across the coffee production value chain, encompassing critical stages such as harvesting, blending, roasting, and packaging. By harnessing sophisticated sensor arrays combined with cutting-edge AI and machine learning analytics, the project seeks to enhance quality control mechanisms. The goal is to ensure that every cup of coffee not only meets but exceeds the highest standards of aroma and taste. Through meticulous refinement of these control mechanisms, the project aims to provide unparalleled consistency in coffee quality, contributing to advancements in aroma profile analysis and taste satisfaction. Leveraging these technologies allows for a comprehensive understanding and control over the complex factors that influence coffee quality, enabling predictive adjustments that ensure optimal outcomes at every stage of production.

Main challenges and topics of the investigation include:

  • Development and calibration of sensor technologies tailored for coffee aroma profiling.
  • Advanced data analytics and machine learning algorithms for volatile organic compound detection and pattern recognition.
  • Real-time monitoring of the roasting process to achieve desired flavor profiles.
  • Quality control automation to standardize coffee bean selection and blend consistency.
  • Integration with IoT for smart feedback loops in coffee machine performance and maintenance.

Expected results

Important expected results of the project are

  • an innovative experimental platform for E-nose test and deployment in the coffee production line,
  • AI-enhanced models for predictive analytics in flavor, quality, and process optimization,
  • and a robust, scalable E-Nose for coffee production from bean to brewed product.
